More about the PaleoRunnerGirl


You know about what I eat, but I realized that I have not told you all much about who I am! So without further ado, this is the Girl behind PaleoRunnerGirl:

Pardon the equestrian garb. I was born and raised outside of Louisville, Kentucky. I adore horses and I miss the pastures of my youth. I am always happy to return to the South whenever I can. For the time being, I live in Bethlehem, PA with my husband, Chase.

Chase and I have been married for four years. We met in college and married after graduation. I always swore I would never get married young–ooops!
Chase is finishing medical school and studying to be a Pediatric neurologist. He is also in the Naval medical corp.

Strangely enough, I was never one of those girls who swooned over “a man in uniform.” Don’t get me wrong, he looks quite dashing  in his Summer Whites and Dressed Blues. However, what makes me happy is that he is passionate about the Navy and he loves medicine. It is a win-win in my book!

When I am not cooking Paleo food, I teach American Literature. I was lucky enough to get hired by a university with an awesome online degree program, so I can teach from anywhere and everywhere. Since I have no idea where we will be located in 10 months, I LOVE having this degree of flexibility.

I am obsessed with cooking, running and reading! I teach American Literature at the college level, but enjoy books of all kind! After years of GI issues and being prescribed numerous medications, I found perfection in eating Paleo! I am no longer bloated, nauseous, or miserable on a daily basis. I have delved into creating Paleo recipe-making and embracing an active and playful life!
