The Best Chili/Vegetable Stew/Amazingness in a Bowl EVER.

Ok, so I realize that the title may seem a bit much, but I am not lying. This stuff is insane. It is Paleo, but even if you aren’t Paleo you will love it (My husband sure did!).

My goal when I am making supper (do you call it supper or dinner?) is to include as many veggies as possible. I feel like soup is a guaranteed way to make this dream a reality. A serving of veggies is usually 1 cup raw or 1/2 cup cooked. Consequently, in a big bowl of soup, it is possible to be eating 4 entire serving of veggies (btw: I believe in GIANT bowls of soup.)

With the dawn of October, I have had one thing on my mind: Chili. Now, I realize I posted a Paleo Pumpkin Chili recipeย  about a month ago, and while it was good, it was not perfect. Consequently, I decided that this weekend was time to reach perfection: Game. Set. Match.

The reason why I call this Chili/Stew/Amazingness in a Bowl is because it does not firmly belong in any one category. In my humble opinion, it gleans from the best of all genres.

This is a slow-cooker recipe, but it can easily be done in over the oven. However, if you do not have a crockpot, you really must go to Target and pick on up. They are $20. Seriously, it will be the best purchase of your life.

Sally Anne’s Amazingness in a Bowl

1 lb lean ground beef (you could easily substitute turkey or tofu)

1 medium onion (Chopped)

2 tsp. minced garlic

1 tbsp. olive oil

2 sweet potatoes (peeled and diced)

2 cups cabbage (chopped)

1 cup diced carrots

1/2 cup diced celery

2 diced zucchini/summer squash

Crushed Tomatoes (28 oz)

Diced tomatoes with green chilis (12 oz)

2 beef bouillon cubes

2 tbsp. Apple Cider Vinegar

2 cups tomato juice

1 tbsp. chili powder

1 tsp oregano

1 tsp basil

1 tsp cumin

1 tsp Old Bay seasoning

1/4 tsp cayenne pepper

1/4 tsp red pepper flakes

1/4 tsp dry mustard

1) Saute onion, garlic, and ground beef in 1 tbsp. olive oil over medium heat until meat is brown

2) Dice veggies and place in crockpot (I dice veggies in advance) also the celery and zucchini is not pictured

3) Dump all tomato ingredients in the crockpot

4) And then proceed to put your entire spice cabinet into the crockpot

5) Cook on low 6-8 hours

6) Enjoy!

I served my bowl of Amazingness with diced avocado….So. Stinking. Good. Chase liked his with a cap full of Apple Cider Vinegar

Seriously, you need to make this! I have been looking forward to dinner since waking up this morning!

    I’m a sucker for tomato basil soup. It never fails. Something about the warm soup with half of a grilled cheddar cheese sandwich, I find extremely comforting!

  5. Love this and will be making it soon! Crockpots are a wonderful thing and I love finding new recipes that I can use in it. ๐Ÿ™‚

    My favorite stew is called Brunswick stew. It’s an old VA game stew now made with chicken. It’s perfect for any Fall day.

  6. Ooo. We just got a crockpot as a late wedding gift. I love all the vegetables in it. I have hard time sneaking those in sometimes. I love all chilis and like tortilla soups. And black bean soup!

    The pre chopping must have saved so much time! I need to get my act together enough to pre chop things!

    • I always pre-chop the night before when Chase and I are watching a movie or something. I have the hardest time staying still so it is a perfect way for me to do dinner prep the night before, but not feel like it is a chore!

  8. I’m like Chase and LOVE Cider Vinegar added to Chili!! It gives Chili the perfect tart edge! Yum, I plan to try this in November when a brisk chill is in the air!!

  9. I love baked potato soup! Especially from Panera. It’s probably so unhealthy, but it’s so good that I just don’t care! ๐Ÿ˜‰

  11. I didn’t have a crockpot so my mom gave me one (of her three!) and I’m dying to use it! This may be first on the list! Did you use a recipe or did you create this yourself? I think the flavors sound divine together ๐Ÿ™‚

  12. Looks tasty! Definitely going to try this out soon! I just made another batch of bison chili so once we finish that off I’ll give this a whirl! Love the avocado – my mom just sent me a box of California avocados and I’m about out ๐Ÿ˜ฆ

  15. Great recipe! Gonna give it a shot! I love some good turkey chili! Just found your blog- love it! I was recently diagnosed as celiac, and though I have been GF for a few months, I am still having loads of GI issues. Tons of people have recommended paleo, and I came upon your blog! Looking forward to reading more!!

    • Hi Ali! Thanks for stopping by my blog! I went Gluten-Free but still felt less than ideal with stomach issues. After going Paleo, everything changed for the better! I really recommend it!

    As a former Home Ec teacher, I recommend all kitchens have on hand at all times: Some form of canned tomatoes (or fresh); at least one large onion; celery for sure; a green pepper which can always be there by having frozen it earlier…(at times I found green pepper flakes in the spice section, but can’t find them any longer)and bullion cubes (beef, chicken or vegetable). These are used for many, many dishes.

    But, speaking of “soups”, every two weeks, or so, I serve vegetable soup with all left-over vegetables (in base of the tomato, onion, celery, pepper flakes and bullion). Along with salt and pepper, I also like a little dash of cloves.
