Thank you all for your kind words on yesterday’s post! It sounds like several of you share equally awkward first kisses! I am glad I am not the only one! 🙂
Chase got home from the hospital late but quickly got dressed and we were off to a secret location that ended up being dinner reservations at one of our favorite fine dining restaurants in Bethlehem: Edge Restaurant.
I was pumped!
Don’t you love Chase’s 7 fingers to celebrate the occasion! He is not throwing gang signs.
We love Edge because it has perfect ambiance. They always play really classy jazz and indie music at the ideal volume where you can listen but also talk. It is rarely packed, so you don’t feel like people are encroaching on your space. The lighting is also quite romantic. It is simply lovely!
I had a rather handsome date!
While I had been strictly admonished to abandon my frugal frog ways at this celebratory dinner, Chase and I decided to split a salad to start. I TOTALLY recommend it as it is often a perfect pre-meal portion (and frugal…shhhh).
We started with the Baby Arugula and Spinach Salad.
It was positively delightful! The pickled red onions were my favorite!
The little white things are egg whites, not cheese. This was a perfectly Paleo starter–Score!
I was a bit overwhelmed by the menu and ended up being lame and ordering a fancy burger, the Triple Truffle House Burger to be exact:
I asked for no bun or cheese, but they ended up just leaving everything off and I received a lone burger, no Bibb lettuce, nothing. 😦
I realize that the Truffle french fries were not paleo, since white potatoes are on the “not ideal” list. However, I usually have no trouble with white potatoes and these were DELICIOUS. I ate them with great satisfaction!
While we did not order dessert, as we were STUFFED, they brought us out this glorious and complimentary “Strawberries and Creme” dessert. The waitress noted that I did not eat gluten, so she surprised us with this. It was delightful! A perfect palate cleanser!
Not only were we given free dessert, but the manager also gave us a gift card because they had overcooked my burger. So while this was not supposed to be a frugal night, it ended up being rather economical! Um, happy anniversary to us (and our wallets!).
I was VERY excited about the gift card.
We then got on with the rest of the celebration. We traded gifts and has a kiss re-do. It was much better this time.
I gave Chase “Curious George” stories.
He was excited!
Then he presented me with our final evening activity: Watching “You’ve Got Mail.” The first movie we watched together freshman year and which we proceeded to watch on a bi-weekly basis throughout college.
And yes, we do know the whole movie by heart and yes, we are those annoying people who proceed to quote lines during the entire movie.
Also, while you can’ t tell this from the picture, I watched the movie in the comfort of my Kathleen Kelly(the character Meg Ryan plays) pajamas that Chase got me for Christmas when we were dating. We are 100% obsessed with You’ve Got Mail.

Watching YGM got me thinking, what ever happened to Meg Ryan? She has basically disappeared! She is/was one of my favorite actresses. I love almost every single one of her movies. I think Reese Witherspoon is kind of her 2000’s replacement.
