The Best Omelet in the World

Thank you for all of your feedback on what you would like to see more of on this little bloggy!

Everyone expressed interest in getting healthy yummy recipes, especially holiday recipes. So that is what I plan on doing!

I would like to begin with the most amazing omelet recipe in the world.

Basil and Caramelized Onion 4 Egg Omelet

This basically fits every single one of the categories above: it is full of protein, vitamins, a bit of healthy fat, it tastes delicious AND it would be amazing for a holiday breakfast or brunch. I would most especially recommend it for Thanksgiving breakfast, or pre-shopping Black Friday sustenance. I also love it for a quick dinner.

The ingredients needed are as follows:

2 whole eggs

2 egg whites (the whites make it fluffy!)

1/4 cup caramelized onions

3 chopped fresh basil leaves

1/8 tsp pepper

Dash of salt, if desired

1 tsp olive oil

1) Coat a saute pan with 1 tsp olive oil and heat on medium low heat

2) Whip eggs with a fork until combined

3) Pour into pan and cook for 2 minutes

4) Add onions, basil, pepper, and salt and cook 4 minutes until you can flip over one side with a spatula (the egg should be firm and partially set

5) Cook one additional minute on each side

I like to eat mine with avocado on the side. It adds more staying power.

If you would like to add some nitrate-free ham, or some turkey or chicken, go for it! I. however, like the simplicity.

Lately, I am all about onions. Did you know the phytochemicals in onions help lower cholesterol, your risk of heart disease AND cancer. These babies are powerful!

In other news, I found the Frugal Frog deal of the month today!  I was at Target to pick up toiletries and just HAD to browse the sale items. I happened to run across this little beauty:

It was $39.99; however, it was missing a button so they marked it down to $9.99.

Now, I am no Martha Stewart, but I am able to sew on the extra button they always have stuck to the tag on the inside of a coat. Thus, viola! I have a new lightweight coat. Love. Love. Love.

If you have been reading my blog for a while, you probably know I have a serious obsession with shoes. However, I also have a budding coat/jacket collection. I am thrilled with this new addition.

    • I have officially forbidden myself from buying anymore cardigans–I just love them! However, I am terrible at mixing and matching them with outfits. I am working on improving my wardrobing abilities!

  3. It’s the fresh basil…. I think you can make dirt taste good as long as you put some fresh basil in it 😉 Okay, too far? Yep but still- basil = ❤

    • Julie, I am right with you, girl! I would totally eat anything with a nice basil garnish! I am just delving into the whole world of herbs and oh. my. goodness. I have been missing out! You need to get your little bootie over to the East coast and we can have an entire day filled with basil-infused goodness!

    I absolutely love scarves and wear them year round, but I look a little more practical and a little less ridiculous when I wear them in fall and winter.

  8. That’s a great coat. I really like a lot of the coats at Target, and even $39.99 is not a bad price for a good jacket. I didn’t get my comment in yesterday, but I’d be interested in you doing a post about how you balance you being paleo and Chase not. Especially when you first went paleo, was it hard to have his non-paleo stuff around?

    My obsession….jewelery! It makes an outfit, an outfit. I plan to head out on my annual Fall shopping trip tomorrow. Though I dislike shopping, I’m actually excited!

  12. You’ve totally made me hungry for an omelette now! My strategy is always to heat the pan without any oil or butter, add some water to the pan, swirl it, tip most out, add tablespoon of butter,swirl it, turn heat way down – and add eggs. Yours looks MUCH simpler and you still get the perfect omelette! Basil in omelette is great – have you tried with mint as well!? SO good!!!

  15. Your omelette looks lovely! Avocado + eggs = AH-MAZING!! Do you go through a lot of eggs? We sure do, about 3 dozen per week …is that crazy??

    Also, I love your new coat! What a steal!!
