The Best Salad in the World

For Thanksgiving, I was responsible for making the turkey and for preparing a side dish.

Even when I was a die-hard vegetarian, I loved preparing meats. I have always loved cooking, and I found roasting the Thanksgiving or Christmas turkey an exciting culinary adventure.

My secret is lots and lots of fresh rosemary.

 

I totally stole a taste from the left side…can you tell?

The side dish I decided to prepare is my own take on the Barefoot Contessa’s Butternut Squash salad. This is the most delicious salad I have ever eaten. Even if you do not like squash–this salad will make you love it!  While the idea came from Ina, I made many adaptations.

Butternut Squash Salad

3 cups fresh arugala

3 cups fresh spinach

1 butternut squash, peeled and diced

2 tbsp. olive oil

2 tbsp. maple syrup

1 tsp black pepper

1/4 tsp salt

Candied walnuts & pecans

1/4 cup dried cranberries

1/4 cup dried cherries

1) Preheat oven to 400 degrees. Mix butternut squash, olive oil, syrup,  salt and pepper.

2) Bake for 15 minutes on a baking sheet

3) Add dried cranberries and cherries and bake an extra 5-10 minutes.

4) Pour on top of arugala and spinach mixture and then sprinkle on the candied nuts and drizzle on Apple Cider Viniagrette

Apple Cider Viniagrette:

3/4 cup olive oil

1/2 cup apple cider vinegar

1 tbsp. dijon mustard

2 tbsp. maple syrup

1 tsp. salt

1/2 tsp pepper

1) Pour into a blender and blend 30 seconds

2) Drizzle on the salad and eat every last morsel.

  3. Oh that looks so yummy! And yes – very brave with the turkey! My fave salad is probably the artichoke fennel and feta one I posted BUT my fave paleo salad is shredded lettuce (of all types) bacon (!!!) vinegarteet and a poached egg on top – so delicious!

    I didn’t know that you were a vegetarian either! Funny, I love turkey, but have never even attempted to cook a whole one myself. It seems so intimidating!

  6. You’re a braver woman than I am to handle the turkey! My husband’s boss actually gave him a turkey & it’s sitting in our freezer… I don’t know which one of us is actually going to attempt to do anything with it! haha

  9. Both the turkey and the salad look wonderful! I LOVE b-nut squash and I have never tried it on salad so I’m going to have to try that – looks so good!

  13. okay..so i think i need to try this. i guess ill just cook the cranberries first? they dont really taste so good raw…..i love dried cherries SO much. awesome recipe!
