Scenes From a Weekend

Hello Readers!

Sorry for the lack of posting. Right now I am currently straddling 3 different jobs and it has left me with absolutely no time to blog. Hopefully, I will be cutting down to only 2 jobs this week. Have I mentioned that I have trouble saying no?

My goal for this weekend was to find some time to hang out with this crazy kid:

Chase has additional free time this month, so I have been introducing him to one of my BFF’s.

I have been trying to turn Chase into a runner our entire relationship; while, I have come to accept the fact that he will never run a marathon with me, it has been fun to take him on my treadmill runs with me.(Yes, we are that annoying couple who runs on neighboring treadmills).

When we weren’t running this weekend, we were trying to carve out time to go on a date.

I recently was notified via e-mail of a marvelous dining deal from Don Pablos. Since signing up for the Habeneros club, my frugal frog heart has been dying to return to redeem some of the coupons that have been burning a hole in my pocket!

During our visit, we redeemed our free dip sampler, which we earned for simply signing up for this free rewards card.

Chase was TOTALLY pumped!

Ever since going paleo, dining out has been a bit tricky as I must avoid gluten at all cost. However, this is rather easy at Mexican restaurants. My go-to paleo order is fajitas minus the tortillas, cheese, rice, beans, and sour cream.

Basically, I eat a skillet full of chicken and grilled onions…some might think this strange. I, however, think it DELICIOUS! I also appreciate not having a crippling stomach ache for dessert.

This meal makes me happy!

 

The greater part of this weekend was spent reading 40 page graduate papers–gah! And also creating pages and pages of course syllabi…However, we did participate in a rather festive event last night which included seeing a 3 story Christmas tree made out of Peeps.

Yes, indeed, this entire tree is handcrafted from those marshmallow confections. And here is the proof:

 

How stinking amazing is that?! For those of you who may not know, Bethlehem, PA is home to Just Born Inc. (aka PEEPS!)

Although I am not a fan of eating peeps, I think they are arguably the most adorable food, ever!

  1. I could totally eat grilled chicken and onions as a meal…I love onions so much! The Peeps tree is adorable! Hope your schedule lightens up a bit this week!!

    I think it’s bad when I have to read my 10th graders’ 3-5 page research papers… you take the cake with reading 40 page papers!

  3. Yay! A shout out to my hometown…Bethlehem! I am not a huge PEEP eater, but I always force myself to eat at least one..(I know…strange) You better get reading girl!

  4. I can totally sympathize with you on not having a stomach ache for dessert! One of the most frustrating things for me is being scrutinized for eating healthy, but what most people don’t realize is with all my food allergies it just not worth it to eat the junk!

  8. It’s good to see you and Chase together again! 🙂

    We went to a YMCA charity event this past weekend, unfortunately we didn’t win any of the raffle prizes (and they were amazing too!) but we had a great time and it was for a good cause so we were glad to support it. We also got our tree up! 🙂 Getting in the holiday spirit over here!

  10. ohh my gosh I love peeps! and chicken fajitas! enjoy all the wonderful time with your man! I loveee u two on the treadmill!! I’m **this** close to getting my bf to run marathons with me, one day!! xoxo!

  11. I’m so happy for you, that you have your other half back! …. The husband and I just put up the Christmas tree- an hour or so ago. I’m loving the Christmas lights! They make my heart so happy- nothing like the peeps though….. Speaking of Bethlehem While on my way to live in NY the husband and I drove by an intersection to Bethlehem or Hellertown. You could take one turn or the other…. To see that sign was kind of out of the ordinary.

  13. That is my kind of Christmas tree. I love Peeps! I didn’t know that fun fact about Bethlehem, PA! We used to go there a lot because my sister went to college up that way. 🙂
