Paleo Chicken: Easy, Make-ahead Lunch Ideas

On my day off I decided to do a little meal prep to make quick lunches and dinner options. With the craziness of my schedule I have been relying on lots of quality protein to keep me running 24/7…enter lots of grilled chicken.

For $9 we got 5 GIANT all-natural chicken breasts that will easily make at least 5 lunches and probably 3-4 dinners.

I decided to put my grill pan to good use today.

I also made a blend of my favorite spices to use as a rub:

1/2 tbsp Rosemary

1 tbsp chili powder

2 tsps cumin

2 tsps oregano

1/4 tsp cayenne pepper

2 tsp paprika

I blended them all together and then heated the grill pan and sprayed it with some olive oil

I then coated the chicken with cooking spray and sprinkled the spices on both sides of each chicken breast.

I then covered the chicken with foil and grilled it for 15-20 minutes, turning twice. These were very THICK so I cut them in half in the last few minutes (I wanted them to be as moist as possible).

Now, what are the meals I will be making with this chicken, you may be asking.

Let me tell you:

1) Today I made Paleo lettuce wraps with Romaine lettuce, slices of avocado and chicken.

2) Grilled Chicken Salad (This is what I will be bringing with me to babysit this week).

3) Chase will be smothering the chicken with BBQ sauce and make BBQ sandwiches.

4) My favorite way: Cold, sliced into pieces and dipped into ketchup.

  1. I also cook up a bunch of chicken at once to have ready to go. I’ve been bored with it lately though, I like your spice combo I think I need to be more creative with my spices. I like to mix chicken with some olives and tahini for a snack.

  2. Baked/grilled chicken is of course amazing, but I do sometimes get sick of the same old flavors I use! Thank you for the new ideas 😀

  3. I LOVE charcol (however you spell it) grilled chicken!! Like the kind you get when you order fajitas! Yum! That alone, well with some ketchup, is my fave!

    Love these ideas! Some are new to me and will be used in the future.

    And by the future I mean tomorrow 🙂

    I love all of the meals that you will be making with those chickens! It sounds delicious and so easy to make! I should definitely make lots of chicken and create simple yet delicious meals like you. It saves so much more money that way!

  6. I love chicken. Can you believe I almost never make it because the raw meat grosses me out so much? I always make Kevin do it. Especially if there’s blood. I’m totally squeamish when it comes to that!! But I love to eat it. I love to order salads with chicken when I go out. And I love it in wraps or on little pizzas.
