Paleo Pumpkin Mousse

I made a pumpkin pie for Chase last week and decided I wanted to try to make a paleo equivalent. However, I did not want to have to deal with making a gluten-free paleo crusts—so I decided pumpkin mousse was on the docket.

I had refrigerated a can of coconut milk overnight.

I then scooped out the coconut milk that had solidified into cream and added ½ cup of canned pumpkin.

I then added about ¼ cup of granulated sugar:

And ¼ cup of brown sugar:

The most important addition was ½ tsp cinnamon:

Then I whipped in the kitchen aid for about 1 minute:

I stored it in the fridge and had it as a lovely little paleo treat!

This was very delicious!

  2. mmmm so lovely! I bet blending a banana instead of sugar would be a great sugar substitute also. Or even some dates thrown in there. I’m buying coconut milk asap, there are so many great treats I want to make with it!

  7. I have seen one other person do this and thought “I neeeeeeed to get my hands on a can of coconut milk!” Geeze- now I really neeeeed to do it! Yummm!
